We strive to get as many cuts out of an animal as possiable, and not send everything to be ground. That means we have a lot of cuts that are not usually seen in the grocery store. Also because of the nature of our animals marbling and tenderness, what is usually considered to be a "lower end" cut, is top still top quality!

Stew Meat- Our Stew meat is in 1lb packs and it is from all over the animal making it a nice mix of flavors. It is also great size cuts to be used for kabobs.
 
Sirloin Boneless Top Strip- This is the cut to WOW a crowd. A sirloin has all of the flavor and tenderness as a premium steak. Easy to grill cut to add to your favorite dish. This has a bold beefy flavor and is more naturally lean, but very tender.
 
London Broil- Our London Broil comes from the Top Round of the animal. This cut does well after marinating and can either be cut up and cooked on the stove up, or cooked as its name indicates- Broiled! Cut thin against the grain and can be topped with a gravy, or added to tacos. Our London Broil is boneless, cut to 1in thick and is around 2lbs.
 
Shaved Beef- Our 1lb packs of shaved beef are a fan favorite! The beef is thinly pre sliced and is great on sandwiches, tacos, or Asian Dishes! Be sure to stock up when this is available, they go fast!
